Abu no Tsuru Sake Brewery “Miyoshi 90 no Kuro” — A Challenge and the Beauty of Unpolished Rice

Miyoshi 90 no Kuro, crafted by Abu no Tsuru Sake Brewery in Yamaguchi Prefecture, is a remarkable sake with an exceptional 90% rice polishing ratio. Made with minimal polishing, the rice retains its natural character, appearing slightly darkened. This unique brewing method presented challenges for the Toji (master brewer), and the name carries a hidden concept of “bittersweet struggle.”

The resulting flavor is a harmonious balance between the dynamic boldness of unpolished rice and an unexpectedly fruity aroma. The bottle design reflects this philosophy, featuring a matte black bottle with a matte black foil-stamped label. Every detail, from the texture of the paper to the subtle variations of black, was meticulously considered. The design avoids reflections, emphasizing depth and sophistication. This combination of design and flavor has earned high recognition, making it an award-winning sake.
